It is no secret that I am a huge fan of shortcuts, and using a box of cake mix to make cookies is one of my favorite time-saving baking tricks.

Ingredients

Box of white cake mix, oil, 2 eggs, candy eyes, Halloween sprinkles, and orange food coloring

Here is what you will need:

  • White cake mix: Other cake mix varieties could be used for cake mix Halloween cookies but to get the brightest color cookies you want to start with a white base.
  • Eggs
  • Oil: Vegetable oil or canola oil work well. Or you can substitute 1:1 with melted butter.
  • Food coloring: Use gel food coloring if at all possible. It will give you the boldest and brightest color.
  • Sprinkles and candy eyeballs: Grocery stores and craft stores usually have a nice variety of Halloween baking supplies this time of year. But if you are having trouble finding candy eyes or Halloween sprinkles you can always order them on Amazon instead. These sprinkles come with eyeballs in them so they would be perfect.

How to Make Monster Cake Mix Cookies for Halloween

These monster Halloween cookies really couldn’t be any easier to make. Here is how:

  1. MIX DOUGH: Combine cake mix, oil, and eggs in a large bowl. Stir in food coloring and sprinkles.
  2. SCOOP: Scoop dough onto a lined baking sheet. Top with more rainbow sprinkles, if desired.
  3. BAKE: Bake for about 10 minutes.
  4. DECORATE: Press eyeballs into the top of warm cookies.

Storage

Halloween cake mix cookies can be stored covered or in an airtight container at room temperature for up to 5 days.

Recipe Tips

  • Skip the non-stick spray and use parchment paper or silicone liners instead. Non-stick spray can use the cookies to spread too much in the oven.
  • If the dough is too sticky to work with pop it in the fridge for 30 minutes or in the freezer for a few minutes.
  • Keep your scoops of cookie dough the same size to make sure that they bake envely. A cookie scoop is perfect for this!

Use this easy Halloween cookie recipe as a starting point and then feel free to get creative with it.

Here are some ideas:

COLORFUL COOKIES: Divide your cookie dough into 2 or 3 bowls and color each with a different color of gel food coloring. Green, orange, and purple are my favorites for Halloween although bright pink and blue monsters are fun too!

MULTIPLE EYES: Who says all monsters have 2 eyes? Try giving some cookies one eyeball and others 3 or 4 eyeballs.

BRIGHT EYES: Try using eyeballs with long lashes or red eyeballs instead of plain white ones. Or you can use skittles or M&Ms and an edible black marker to give the monster cookies colorful eyeballs. Simply draw a black dot in the center of each candy then press them into the cookies after baking.

Ingredients

  • 1 16.25 ounce box white cake mix
  • 2 eggs
  • ½ cup vegetable oil
  • [orange gel food coloring]
  • [¼ cup halloween sprinkles]
  • [48 edible candy eyes]

Instructions

  • Preheat oven to 350 degrees. Line cookie sheets with silicone liners or parchment paper.
  • Add cake mix, eggs, and oil to a large bowl. Mix well to combine.
  • Stir in a few drops of orange food coloring. Add more drops as needed to reach the desired shade of orange. Stir in sprinkles.
  • Use a medium cookie scooperor heaping Tablespoon to scoop cookies onto the cookie sheet, at least 2 inches apart. Top with a few additional sprinkles if desired, gently pressing them down to help them stick.
  • Bake 9-12 minutes. Allow cookies to cool on the cookie sheet for 3 minutes before gently pressing eyeballs into them and transferring to a cooling rack to cool fully.

Store covered or in an airtight container at room temperature for up to 5 days.
