No-Bake Nutella Cookies

Easy-to-make no-bake Nutella cookies are rich, chewy, and packed with irresistible chocolate hazelnut flavor.
Sure classic no-bake cookies are amazing. But what if you swap the peanut butter for creamy Nutella? Hello, my new favorite no-bake cookie!
I swear I could eat the whole batch on my own. But then again, I never have to because my husband and son are always more than happy to help.
Give the recipe a try and I am sure you will fall in love with them as well. The chocolate-hazelnut flavor combination really is irresistible.

Ingredients
You will need:
- 2 cups granulated sugar
- ¼ cup butter
- ½ cup milk
- ¾ cup Nutella
- 2 Tablespoons cocoa powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 2 ½ cups quick-cook oats
Substitutions and additions
- Old-fashioned oats: While quick oats result in perfectly tender cookies, you can also use old-fashioned oats if that is all you have on hand. However, I would recommend throwing them in your food processor for a few seconds to break them down a bit. Otherwise, your cookies will be chewier and have a different texture than if you had used quick-cook oats.
- Hazelnut extract: To bump up the hazelnut flavor add ½ of the hazelnut extract and cut the vanilla to ½ teaspoon.
- Coconut: Love coconut? Try adding ½ cup coconut when you stir in the oats.
How to make Nutella no-bake cookies
Step 1: Add sugar, butter, and milk to a large saucepan and bring to a roiling boil over medium heat, stirring often. Let boil for 1 minute, stirring constantly.
Step 2: Remove from heat and immediately stir in the Nutella, cocoa powder, vanilla, and salt until well combined. Add the oats and stir gently until well coated.
Step 3: Scoop or drop by the spoonful onto lined baking sheets and allow to them set at room temperature until cooled and hardened, about 1 hour.
Storage
- Countertop: Nutella no-bake cookies can be stored in an airtight container at room temperature for up to 4 days. Place a sheet of wax paper between each layer to prevent sticking.
- Freezer: For longer storage, you can freeze cooled cookies in an airtight container for up to 3 months. Thaw to room temperature before serving.
Recipe Tips
- Measure out all of your ingredients before you begin. This will help you to work quickly later.
- Make sure the butter, milk, and sugar mixture come to a full rolling boil before you start your 60 second timer.
- Once you remove the pot from the stove work quickly to add the remaining ingredients and get your cookies scooped onto the baking sheets before they start to set.

Consistency was way too dry to hold the scoop shape, or to pick up to eat. So milk was added until the cookies could be formed.
