The natural sweetness of the carrots gets a boost from honey and brown sugar, creating a sticky-sweet glaze that caramelizes as it bakes. They’re just sweet enough without being overpowering, making them a great complement to savory mains like spiral honey ham and roast turkey or even a simple grilled chicken.

These glazed baby carrots fit right in with Christmas and Thanksgiving staples like creamed spinach and green bean casserole but they’re also easy enough to make any day of the week. With minimal prep and just a handful of ingredients, they’ll quickly become a favorite!

A top-down view of ingredients on a white marble surface, including a bowl of bright orange baby carrots is the largest item. Surrounding it are small dishes containing light brown sugar, cubed butter, golden honey, and spoons filled with salt and pepper.
  • Baby carrots – I use baby carrots because they don’t require any peeling or chopping. They generally come washed and ready to eat, but if you do want to wash them first, be sure to dry them fully.
  • Brown sugar and honey – The key to the sweet, sticky glaze. Brown sugar adds depth and a rich color, while honey brings natural sweetness and shine. Pack the brown sugar into the measuring cup to ensure you’re using the right amount.
  • Butter – Slice the butter so it’s easier to melt into the glaze, giving it a smooth consistency.
  • Salt and pepper – Enhances the flavors and balances the sweetness.

How to Make Brown Sugar Baby Carrots

This section shows you how to make the recipe with step-by-step photos and instructions. For the full printable recipe, see the recipe card below.

Step 1: Add the carrots to a rimmed baking sheet, arranging them in a single layer. They should fit without overlapping.

Step 2: Melt the butter and brown sugar in a saucepan over medium-low heat. Whisk often until the sugar dissolves. Avoid turning up the heat as you don’t want the sugar to burn. Remove the pan from the heat and stir in the honey.

Step 3: Pour the glaze over the carrots and toss them so that all of the carrots are evenly coated. Season with salt and pepper and give them another toss. Spread them back out into a single layer.

On the left, a thick golden-brown glaze made of brown sugar, butter, and honey is being poured from a metal bowl onto a pile of baby carrots. The glaze is smooth and glossy. On the right, a baking sheet lined with baby carrots, evenly spread out and coated with the glaze.

Step 4: Roast in a preheated 400°F oven for 25-30 minutes, tossing halfway. Once fork-tender, toss them once more before transferring them to a serving dish.

Pro Tip:

Skip the parchment paper! It can cause the glaze to solidify in clumps instead of coating the carrots evenly.

Storage

Refrigerator: Keep leftover honey brown sugar carrots in an airtight container for up to 3 days.

How to Reheat: Warm in a large skillet over medium heat or microwave in short intervals until heated through.

Recipe Tips

  • Prefer softer carrots? Parboil them for a few minutes before roasting.
  • Using larger carrots? Slice them into uniform pieces and adjust the cooking time as needed.
  • Double the recipe? Use two baking sheets to avoid overcrowding.
  • Want extra caramelization? Broil for 2-3 minutes at the end.

Serving Suggestions

This glazed carrots recipe pairs well with a variety of main dishes.

For the holidays, it pairs well with air fryer spiral ham and party potatoes, and for Sunday dinner they go great with things like roast beef, crock pot steak bites, slow cooker BBQ brisket, chicken noodle casserole, and easy oven pork chops!

Additions and variations

  • Swap the honey. Use maple syrup for a slightly different flavor.
  • Add some heat. Sprinkle with red pepper flakes.
  • Use fresh herbs. Fresh thyme or fresh parsley is a great way to garnish the dish.
  • Extra flavor. Stir in minced garlic and/or a squeeze of lemon juice.
  • Different cuts of carrots. Use whole carrots (trimmed) or slice them into rounds for a different look.
