  • Sprinkles – Optional, but I like to add a bit of additional sprinkles to the cookies for an extra pop of color.

How to Make Funfetti Cake Cookies

Cake mix funfetti cookies really couldn’t be any easier to make. Here’s how:

Step 1: Add the box of cake mix, oil, and eggs to a large bowl. Mix well to combine.

Step 2: Chill dough in the refrigerator to chill for at least 30 minutes.

Step 3: Roll dough into balls and place on a lined baking sheet. Top with extra rainbow sprinkles, if desired. Press the dough balls down gently to flatten slightly and help the sprinkles stick.

Step 4: Bake for 10-12 minutes.

Storage

Room Temperature: These fun cookies will keep for up to 5 days when stored in an airtight container at room temperature.

Freezer: You can freeze your cookies or freeze the cookie dough balls for up to 3 months. To freeze, place the cookies or dough in a freezer-safe container or bag and freeze them while lying flat. Place a piece of parchment paper between layers to prevent sticking.

Baking Tips

Chill the dough: Chill the cookie dough for at least 30 minutes before baking for best results. Chilling makes the dough easier to work with and helps to prevent the cookies from over-spreading in the oven.

Use Parchment Paper: Non-stick spray can cause cookies to spread out too much during baking so I recommend using parchment paper instead.

Keep Size Uniform: Use a cookie scoop to portion the dough for evenly sized cookies and to ensure even baking.

Shape Dough: After rolling the dough into balls and placing on the baking sheet, press down to slightly flatten the cookie dough balls (see image above). This will help the cookies bake up in a nice round shape. Also, if you are adding sprinkles on top pressing them gently into the dough helps to keep them in place.

Variations

  • Chocolate chips – Stir in 1/2 cup of white chocolate chips or semi-sweet chocolate chips to the cookie dough for added richness.
  • Vanilla extract – Add 1 teaspoon of pure vanilla extract extra for deeper flavor.
  • Frosting – Top cookies with a layer of funfetti frosting (available in the baking aisle at the grocery store) for an extra layer of sweetness and color.

Recipe FAQ

Do I have to chill the cookie dough?

While I recommend chilling, if you are short on time you can skip chilling the dough. The cookies will spread out more while baking resulting in flatter cookies, but they will still taste yummy.

Can I use a different type of cake mix?

Absolutely! While funfetti adds a colorful touch and yummy cake batter flavor, you can use any flavor of cake mix you prefer. Just remember to add sprinkles if you’re swapping out funfetti for a plain white cake mix.

Why is my dough so sticky!?

This is a sticky dough, so you probably didn’t do anything wrong. But if the dough is too sticky to handle, pop it back in the refrigerator to chill for another 30 minutes or so. You can also lightly grease your cookie scoop or lightly flour your hands to prevent the dough from sticking as you shape the cookies.

Funfetti Cake Mix Cookies

You are going to love these easy 3-ingredient funfetti cookies made with boxed cake mix! The fun sprinkle cookies are easy to make and perfect for birthdays or any celebration!

Ingredients
 

  • 15.25 ounce Funfetti cake mix (1 box)
  • 2 large eggs
  • cup vegetable oil
  • rainbow sprinkles optional

Instructions

  • Add cake mix, eggs, and oil to a large bowl. Mix well to combine. Optional: mix a little bit of additional sprinkles into the cookie dough for added color.
  • Chill the dough in the refrigerator for 30 minutes.
  • Preheat oven to 350℉. Line cookie sheets with parchment paper.
  • Roll dough into 1-inch balls and place on baking sheets at least 2 inches apart. Top with extra sprinkles, if desired. Gently press down on the tops of the dough balls to flatten slighty.
  • Bake for 10-12 minutes or until the bottom just starts to turn a light golden brown. Do not overbake. Cool on baking sheets for 10-15 minutes then transfer the warm cookies to a cooling rack to cool completely.

Notes

For even baking, I recommend using a cookie scoop to make sure all cookies are the same shape and size.
Store cookies covered in an airtight container at room temperature for up to 5 days.
