Shrimp Scampi with Pasta

Yield: 4
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

An easy shrimp scampi recipe served over angel hair pasta. Just 15 minutes from start to finish!

Ingredients

  • 1/2 pound angel hair pasta
  • 1/3 cup pasta water reserved after cooking
  • 2 tablespoons olive oil
  • 4 cloves of garlic, crushed
  • 1 pound medium shrimp, peeled and deveined
  • salt and pepper to taste
  • 1/2 teaspoon red pepper flakes
  • 1/2 lemon
  • 2 tablespoons butter
  • 1/4 cup chopped fresh parsley, chopped
  • 1/2 cup grated parmesan cheese, for serving

Instructions

  1. Cook the pasta al dente according to the instructions on the box. Reserve ⅓ cup of the pasta water after cooking.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat for 1-2 minutes. Add garlic and sauté for one minute.
  3. Add shrimp to the pan; season with salt and pepper. Cook 2-3 minutes on one side, then flip and cook 1-2 minutes more, until the shrimp are starting to turn pink.
  4. Pour in the pasta water and add the red pepper flakes. Bring to a simmer, and cook 2-3 minutes, until the liquid reduces and the shrimp are cooked through.
  5. Stir in the butter and squeeze in the juice of ½ a lemon (use less if you want less lemon flavor). Remove from the heat.
  6. To serve, plate the pasta and spoon shrimp and sauce over top. Top with freshly chopped parsley and serve with parmesan cheese, if desired.

Notes

  • You can swap the angel hair for another pasta such as linguine or spaghetti.
  • If you prefer large or extra-large shrimp, 1 lb of those would work as well.
  • If you prefer no tails on your shrimp, remove them before cooking.
