- 1/2 pound angel hair pasta
- 1/3 cup pasta water reserved after cooking
- 2 tablespoons olive oil
- 4 cloves of garlic, crushed
- 1 pound medium shrimp, peeled and deveined
- salt and pepper to taste
- 1/2 teaspoon red pepper flakes
- 1/2 lemon
- 2 tablespoons butter
- 1/4 cup chopped fresh parsley, chopped
- 1/2 cup grated parmesan cheese, for serving
- Cook the pasta al dente according to the instructions on the box. Reserve ⅓ cup of the pasta water after cooking.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat for 1-2 minutes. Add garlic and sauté for one minute.
- Add shrimp to the pan; season with salt and pepper. Cook 2-3 minutes on one side, then flip and cook 1-2 minutes more, until the shrimp are starting to turn pink.
- Pour in the pasta water and add the red pepper flakes. Bring to a simmer, and cook 2-3 minutes, until the liquid reduces and the shrimp are cooked through.
- Stir in the butter and squeeze in the juice of ½ a lemon (use less if you want less lemon flavor). Remove from the heat.
- To serve, plate the pasta and spoon shrimp and sauce over top. Top with freshly chopped parsley and serve with parmesan cheese, if desired.
- You can swap the angel hair for another pasta such as linguine or spaghetti.
- If you prefer large or extra-large shrimp, 1 lb of those would work as well.
- If you prefer no tails on your shrimp, remove them before cooking.
