This sausage breakfast casserole is one of those recipes that makes mornings feel a whole lot easier. Everything gets prepped the night before, so all that’s left to do is bake it in the morning and enjoy.

I love this recipe when I need something filling that doesn’t require much effort first thing in the morning. It’s especially helpful for brunch, sleepovers, or anytime I’m feeding guests and want something easy but satisfying.

  • Thick white bread – Use sturdy, thick-cut bread like Texas toast for the best texture. Toast the bread first so it holds up well in the egg mixture.

How to Make Sausage Breakfast Casserole

Step 1: In a large skillet over medium-high heat, brown the sausage and crumble it with a spoon as it cooks. Drain the excess fat and set it aside.

Step 2: In a large bowl, whisk the eggs, half and half, dry mustard, salt, and pepper well to combine. Stir in the grated cheese, bread cubes, and cooked and drained sausage.

Step 3: Pour the sausage and egg mixture into a prepared 9×13 baking dish. Cover it tightly with plastic wrap and place it in the fridge to chill overnight.

Pro Tip:

Don’t skip toasting the bread! Since it soaks up the egg mixture overnight, using toasted cubes prevents it from getting too soggy.

Step 4: When you’re ready to bake it the next morning, preheat the oven to 350°F, remove the plastic wrap, and replace it with a piece of aluminum foil.

Step 5: Bake covered for 30 minutes, then remove the foil and continue baking for another 30 minutes until the center is set. Let it sit for 5 minutes before slicing and serving. Enjoy!

Storage

Refrigerator: Once the casserole has completely cooled, keep it stored in an airtight container for up to 3 days in the fridge. Any residual heat will trap moisture, causing the eggs to sweat and become soggy.

Freezer: Wrap leftover overnight breakfast casserole in plastic wrap and a layer of foil. You can also place it in a freezer bag. Keep it frozen for up to 2 months, and then thaw it in the fridge overnight and reheat it in the morning.

How to Reheat: Perfect for reheating in the microwave for a quick, hot breakfast. If you have a larger portion to reheat, you can pop it back in the oven, covered with foil, to warm through at 350°F.

  • Day-old bread works well, as long as it’s thick and sturdy.

Additions and variations

  • Swap the bread. Sourdough bread, French bread, or even buttery brioche bread would be great.
  • Add veggies. Chopped spinach, mushrooms, green onion, bell peppers, hash browns, etc.
  • Use a different cheese. Swap the cheddar for Colby Jack, Pepper Jack, Monterey Jack, or Swiss Cheese.
  • Try a different sausage. Turkey sausage, chicken sausage, or Italian sausage.
  • Substitute half and half. Whole milk can be used instead.

Overnight Sausage Breakfast Casserole

This sausage breakfast casserole is an easy overnight breakfast made with sausage, eggs, cheese, and toasted bread. It’s hearty, simple to prep ahead, and perfect for holidays, brunch, or busy mornings.

Ingredients

  • 1 pound ground breakfast pork sausage
  • 7 large eggs
  • 1 ½ cups half & half
  • 1 teaspoon mustard powder
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon pepper, or to taste
  • 2 cups shredded cheddar cheese
  • 6 slices thick white bread, toasted and cubed into ½ inch pieces

Instructions

  • Prep a 9×13-baking dish with non-stick spray; set aside.
  • Brown sausage in a large skillet over medium-high heat, using a spoon to crumble the sausage as it cooks. Drain and set aside.

  • In a large mixing bowl, whisk well to combine eggs, half & half, mustard powder, salt, and pepper.

  • Stir in cheese, bread cubes, and sausage. Pour mixture into the baking dish.

  • Cover tightly with plastic wrap and chill in the refrigerator overnight.
  • When ready to bake, preheat the oven to 350°F. Remove plastic wrap, cover the casserole with aluminum foil, and bake for 30 minutes. Uncover and bake for 30 additional minutes uncovered, or until the center is set.
  • Remove from the oven and allow to sit for 5 minutes before slicing and serving.

Notes

The casserole is done when the center no longer jiggles and a knife inserted near the middle comes out mostly clean.
For a same-day casserole, bake right away for about 45 minutes, or until the center is set.
Leftovers can be refrigerated for up to 3 days.
