Like Mint Chocolate Chip Dip and Andes Mint Fudge, I like to make this mint oreo pie when I want an easy mint chocolate dessert that is sure to impresses. It’s also a great way to add a pop of green to the dessert table.

Step 1: Crush 30 mint Oreos into fine crumbs. Mix with melted butter and press into a 9-inch pie pan. Freeze.

Step 2: Beat heavy cream until stiff peaks form; set aside. In another bowl, beat cream cheese until smooth. Add confectioners’ sugar, salt, mint extract, and green food coloring; mix well.
Fold in whipped cream until combined.

Step 3: Pour mixture into crust and smooth the top.

Step 4: Freeze for 6+ hours or overnight. If desired, garnish the top of your pie with piped whipped topping and/or cookie crumbs or oreo pieces.

Pro Tip:

For easy slicing, remove the pie from the freezer about 10 minutes before serving. Dip a sharp knife in hot water, wipe dry, and slice for best results.

No Bake Grasshopper Pie

Made with a rich mint oreo cookie crust and creamy mint filling, this frozen grasshopper pie is sure to impress!

Ingredients
 

  • 26 Mint Oreo cookies plus extra for topping
  • 5 Tablespoons unsalted butter melted
  • 1 ½ cups heavy cream
  • 8 ounces cream cheese softened
  • 1 ½ cups confectioners sugar
  • ½ teaspoon mint extract
  • pinch salt
  • green gel food coloring
  • Cool Whip optional topping

Instructions

  • Crush 26 Mint Oreo cookies into fine crumbs using a food processor.
  • Mix the crumbs with 5 Tablespoons unsalted butter and press into a 9 inch pie plate to form the crust. Freeze while preparing the filling.
  • Using a stand mixer fitted with the whisk attachment, or a hand mixer and a large mixing bowl, beat 1 ½ cups heavy cream for several minutes until stiff peaks form. Set aside.
  • In another bowl, beat 8 ounces cream cheese until smooth. Add 1 ½ cups confectioners sugar, ½ teaspoon mint extract, pinch salt, and green gel food coloring*. Mix until well combined.
  • Gently fold in the whipped cream.
  • Pour the mixture into the chilled crust and smooth the top. Freeze for at least 6 hours or overnight.
  • Before serving, pipe Cool Whip around the edges and garnish with chopped and/or crushed Oreos, if desired.
