I love giving recipes that are not traditionally served at breakfast a breakfast-worthy makeover. Like my breakfast pizza, breakfast popsicles and breakfast cookies, these breakfast calzones are as delicious as they are fun to eat.

Imagine a biscuit folded around sausage, eggs, and cheese. That’s exactly what these delicious breakfast calzones offer.

They are perfect for weekends and taste great fresh out of the oven.

You can also make a batch ahead of time then freeze for a quick breakfast anytime. Just reheat in the oven and you will have a tasty hot breakfast on a busy weekday morning.

This recipe is very flexible.

You can switch up the ingredients to suit your family’s preferences.

If your family likes bacon, use bacon. If they like ham, use ham.

Use any cheese you like.

If you’re trying to cut calories, you can use egg whites in place of one or more whole eggs and use less cheese.

Breakfast Calzones

Ingredients
 

For the Scrambled Eggs:

  • 2 Tablespoons butter
  • 5 large eggs
  • 2 Tablespoons milk

For the Dough:

  • 2 cups all-purpose flour
  • 1 Tablespoons granulated sugar
  • 1 Tablespoons baking powder
  • 1 tsp salt
  • ½ cup cold butter cut into Tablespoons
  • ¾ cup buttermilk cold

For the Calzones:

  • 1/2 cup cheese
  • 5-6 sausages cooked and chopped

Instructions

  • Scramble Eggs
  • In a medium bowl, beat eggs and milk until well combined.
  • Heat 2 tbsp butter in a skillet over medium heat until hot. Add egg mixture. Cook, pulling eggs from the side and folding frequently until the eggs are fluffy and no liquid remains. Remove from heat and set aside.
  • Prepare Dough
  • In a large bowl, mix the flour, sugar, baking powder, and salt. Cut in the butter with a pastry cutter or fork until pea-size pieces form. Add cold buttermilk and mix until dough forms a ball.
  • Roll dough onto a lightly floured surface. Cut into circles using a cookie cutter or a rim of a glass.
  • Make Calzones
  • Preheat over to 325 F.
  • Roll dough onto a lightly floured surface. Cut into circles using a cookie cutter or a rim of a glass.
  • Add 1-2 tbsp of scrambled eggs, a sprinkle of cheese, and a bit of sausage in the center of the dough circle.
  • Bring the edges of the dough together to form a half-circle, then pinch the ends closed. Place on a baking sheet.
  • Repeat steps 3-4 until you've used up all of the scrambled eggs, sausage, and cheese.
  • Bake for 8-12 minutes, until golden brown. Serve hot.

Notes

  • Feel free to switch up the ingredients to suit your family's preferences. You can substitute bacon or ham for the sausage, add chopped veggies, etc...
  • If you’re trying to cut calories, you can use egg whites in place of one or more whole eggs and use less cheese.
