Hamburger noodle soup is a cozy one-pot dinner made with lean ground beef, tender egg noodles, and frozen veggies simmered in a savory tomato broth. It’s warm, filling, and comes together in about 30 minutes — perfect for busy weeknights!

This hug-in-a-bowl is the kind of meal I turn to when the temperature drops and I want something fast, hearty, and comforting. And if you’d rather set it and forget it, I’ve included slow cooker instructions too.

You get all the familiar flavors of beef and noodles, with the bonus of it being a soup that feeds a crowd. And just like my crockpot loaded baked potato soup and slow cooker chicken taco soup, this hamburger soup recipe is easy, budget-friendly, and full of flavor.

  • Lean ground beef – You can also use regular ground beef; just drain any excess grease.
  • Yellow onion & garlic – Adds savory depth to the soup.
  • Beef broth – Use low-sodium if possible so you can adjust the salt to taste.
  • Tomato sauce & diced tomatoes – These create a rich, tomato-based broth.
  • Frozen mixed veggies – A 10-ounce or 12-ounce bag both work well. Use straight from frozen, no need to thaw.
  • Italian seasoning A simple blend of dried herbs like oregano, basil, thyme, and rosemary. It adds great flavor without needing multiple seasonings.
  • Worcestershire sauce -Adds a subtle tang and umami depth to the broth.
  • Salt and pepper – Add to taste.
  • Egg noodles – Use dry noodles (not frozen). They cook right in the pot and soak up all that flavor.

How to Make Hamburger Noodle Soup

Step 1: In a large pot or Dutch oven, cook ground beef and chopped onion over medium-high heat. Break it up as it cooks until no longer pink.

Pro Tip:

If using extra lean ground beef (90/10), add a splash of oil to the pot first.

Step 2: Add the garlic and cook for 1–2 minutes until fragrant. Drain any excess grease and return the pot to the stovetop.

Step 3: Stir in the beef broth, tomato sauce, diced tomatoes, frozen vegetables, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring to a boil, stirring occasionally.

Step 4: Once boiling, add the egg noodles. Reduce heat to medium-low, cover the pot, and simmer for 10–15 minutes or until noodles are tender.

Slow Cooker Instructions

Want to use your slow cooker? Here’s how:

  1. Brown the ground beef and onion on the stovetop, then drain.
  2. Add everything except the noodles to the slow cooker.
  3. Cook on low for 4–6 hours.
  4. Stir in uncooked egg noodles 20 minutes before serving and cook until tender.

Storage

Fridge: Refrigerate leftover beef noodle soup in an airtight container for up to 4 days.

Freezer: Once completely cooled, transfer the soup to a freezer-safe bag to keep frozen for up to 3 months. For best texture, freeze without noodles and add fresh ones when reheating.

To reheat: Warm gently on the stove or in the microwave until heated through.

Recipe Tips

  • Brown the beef well before adding liquids for deeper flavor.
  • Don’t overcook the noodles. Check them beginning at the 10-minute mark.
  • Taste and adjust the seasoning before serving. Depending on what type of beef broth you used, you may need to add extra salt.

Side Dishes for Hamburger Vegetable Soup

While this ground beef soup is hearty enough to stand on its own, I love pairing it with 7 Up Biscuits to soak up every drop of broth and a side of Copycat Olive Garden Salad for a fresh, crunchy contrast.

Additions and variations

  • Swap the meat. Try it with ground chicken or ground turkey instead. Swap the beef broth with chicken broth.
  • Change the noodles: Elbow macaroni or small shells work well too.
  • Add your favorite veggies. Use what you have. It’s a flexible, forgiving recipe. Frozen, fresh, etc. Things like canned carrots, green beans, peas, corn, or mushrooms are great. If using fresh, sauté them with the onion.
  • Make it in the slow cooker: Follow the instructions above for a hands-off version.

This easy hamburger soup is a hearty one-pot meal made with ground beef, tender egg noodles, and frozen vegetables in a savory tomato broth. It’s ready in about 30 minutes and perfect for busy weeknights.

Ingredients
 

  • 1 lb lean ground beef
  • ½ yellow onion chopped
  • 3 teaspoons minced garlic
  • 32 ounces low sodium beef broth
  • 28 ounce tomato sauce
  • 14.5 ounce petite diced tomatoes
  • 10 ounce frozen mixed vegetables or 12 ounce
  • 2 teaspoons Italian seasoning
  • ½ Tablespoon Worcestershire sauce
  • salt and pepper to taste
  • 2 ½ cups egg noodles

Instructions

  • In a large pot or Dutch oven, cook ground beef and onion over medium-high heat until beef is no longer pink, breaking it up as it cooks.

  • Add garlic and cook for 1-2 minutes, or until fragrant. Drain grease and return pot to stovetop.

  • Stir in the broth, tomato sauce, diced tomatoes, veggies, Italian seasoning, Worcestershire, salt, and pepper. Bring to a boil, stirring occasionally.
    32 ounces low sodium beef broth, 28 ounce tomato sauce, 14.5 ounce petite diced tomatoes, 10 ounce frozen mixed vegetables, 2 teaspoons Italian seasoning, ½ Tablespoon Worcestershire sauce, salt and pepper
  • Ounce boiling, stir in the egg noodles. Reduce heat to medium-low, and cover. Simmer for 10-15 minutes, or until the noodles are tender.
    2 ½ cups egg noodles

Notes

To make in a crockpot: Brown beef and onion first, then add all ingredients except noodles to your slow cooker. Cook on low 4–6 hours. Add noodles 20 minutes before serving and cook until tender.
Store leftovers in the fridge for up to 4 days or freeze (without noodles) for up to 3 months.
