This easy hamburger soup is a hearty one-pot meal made with ground beef, tender egg noodles, and frozen vegetables in a savory tomato broth. It’s ready in about 30 minutes and perfect for busy weeknights.
Ingredients
1lblean ground beef
½yellow onionchopped
3teaspoonsminced garlic
32ounceslow sodium beef broth
28ouncetomato sauce
14.5ouncepetite diced tomatoes
10ouncefrozen mixed vegetablesor 12 ounce
2teaspoonsItalian seasoning
½TablespoonWorcestershire sauce
salt and pepperto taste
2 ½cupsegg noodles
Instructions
In a large pot or Dutch oven, cook ground beef and onion over medium-high heat until beef is no longer pink, breaking it up as it cooks.
1 lb lean ground beef, ½ yellow onion
Add garlic and cook for 1-2 minutes, or until fragrant. Drain grease and return pot to stovetop.
3 teaspoons minced garlic
Stir in the broth, tomato sauce, diced tomatoes, veggies, Italian seasoning, Worcestershire, salt, and pepper. Bring to a boil, stirring occasionally.
32 ounces low sodium beef broth, 28 ounce tomato sauce, 14.5 ounce petite diced tomatoes, 10 ounce frozen mixed vegetables, 2 teaspoons Italian seasoning, ½ Tablespoon Worcestershire sauce, salt and pepper
Ounce boiling, stir in the egg noodles. Reduce heat to medium-low, and cover. Simmer for 10-15 minutes, or until the noodles are tender.

Notes
To make in a crockpot: Brown beef and onion first, then add all ingredients except noodles to your slow cooker. Cook on low 4–6 hours. Add noodles 20 minutes before serving and cook until tender.Store leftovers in the fridge for up to 4 days or freeze (without noodles) for up to 3 months.
