This Mexican street corn dip takes everything you love about elote—charred corn, cotija cheese, creamy mayonnaise, lime, and chili powder—and turns it into an easy dip you can scoop with a chip. It has that same sweet, salty, tangy flavor, with no cob and no mess.

It comes together in about 20 minutes with simple ingredients, so it’s an easy one to bring to a cookout or set out for game day. If you like a good scoopable appetizer, it’s right at home next to Cowboy Caviar, Easy Layered Taco Dip, and a bowl of Rotel Salsa.

The one step that matters is charring the corn. Those dark, toasty spots are where the street corn flavor comes from, so let it cook until you see them. Everything else is stir and serve.

It’s good warm right out of the skillet or cold from the fridge, which makes it a reader favorite for parties. Serve it with a big pile of tortilla chips and watch it disappear.

Ingredients

This section includes ingredient notes and substitution options. Get all measurements, ingredients, and instructions in the printable recipe card at the end of this post.

  • Corn – Fresh corn, frozen and thawed corn, or drained canned corn all work. Pat it dry so it chars instead of steaming.
  • Olive oil – For charring the corn in the skillet.
  • Sour cream and mayonnaise – The creamy base. Full-fat gives the best texture.
  • Cotija cheese – A salty, crumbly Mexican cheese, usually near the specialty cheeses.
  • Chili powder, smoked paprika, garlic powder, and salt – The warm spice mix that gives the dip its street corn taste.
  • Lime – Fresh juice only. Bottled lime tastes flat here.
  • Green onions – Sliced, for a mild onion bite.
  • Cilantro – Chopped fresh.
  • Jalapeño – Seeded and finely diced. Leave some seeds in for more heat.

How to Make Mexican Street Corn Dip

This section shows you how to make the recipe with step-by-step photos and instructions. For the full printable recipe, see the recipe card below.

Four steps: charred corn in a skillet, the creamy spiced dressing, everything stirred together, then the finished dip in a bowl.

Step 1: Heat the olive oil in a large skillet over medium-high heat. Add the corn in an even layer and cook, stirring now and then, until it’s charred in spots, about 7 to 10 minutes. Take the skillet off the heat and let the corn cool for about 5 minutes so it doesn’t melt the dressing.

Step 2: In a large bowl, stir together the sour cream, mayonnaise, cotija, chili powder, salt, smoked paprika, garlic powder, and lime juice until smooth.

Step 3: Add the cooled corn, green onion, cilantro, and jalapeño. Stir until everything is coated.

Step 4: Spoon it into a serving bowl serve with tortilla chips for dipping.

Serving Suggestions

Tortilla chips are the classic pairing, and sturdy restaurant-style ones hold up best to a thick dip. Sliced bell peppers or Fritos Scoops work too.

It’s also good spooned over other things. Try it on top of Loaded Nachos, tucked into Walking Tacos, or served next to grilled chicken or burgers.

Storage

Store leftovers in an airtight container in the fridge for up to 3 days. Give it a stir before serving since the dressing settles as it sits.

This dip doesn’t freeze well. The dairy separates and the corn loses its texture, so it’s best made fresh.

Tips for the Best Street Corn Dip

  • Char the corn well. The dark spots provide flavor. Don’t pull the corn off the heat too early.
  • Pat frozen corn dry. Wet corn steams instead of charring. Thaw it and blot it with a paper towel first.
  • Use fresh lime juice. Bottled lime just doesn’t taste the same.
  • Cool the corn before mixing. Hot corn thins the dressing and can make it greasy.
  • Taste before serving. Adjust the salt and add a squeeze more lime if it needs brightening.

Additions and Variations

  • Add more heat – Leave the jalapeño seeds in or stir in a pinch of cayenne.
  • Make it a hot dip – Stir in a block of softened cream cheese and bake at 350°F until bubbly.
  • Add protein – Fold in shredded chicken or crumbled bacon to make it heartier.
  • Use grilled corn – In summer, grill corn on the cob and cut the kernels off for even more char.
  • Finish with Tajín – A sprinkle on top adds extra tang and a little heat.

Elote is coated in a mix of mayo, sour cream or Mexican crema, cotija cheese, chili powder, and lime, then finished with cilantro. This dip uses those same flavors in a scoopable form.
