This Slow Cooker French Dip is made with seared chuck roast cooked low and slow in a savory au jus, then piled onto toasted rolls with melty provolone cheese. The au jus on the side is what makes it.

There’s something about pulling a fall-apart tender roast out of the slow cooker after a long day. The slow cooker does the work, and you end up with shredded beef that tastes like it came from a deli counter.

Ingredients for Slow Cooker French Dip

- Chuck roast – Holds up well in the slow cooker. Brisket or rump roast work too.
- White onion and garlic – Thinly slice the onion, mince the garlic.
- Beef broth – The base of the au jus. Use low-sodium so you can adjust the salt at the end.
- Worcestershire sauce, soy sauce, and balsamic vinegar – The flavor trio that gives the au jus its depth and color.
- Dried thyme, dried rosemary, and a bay leaf – Classic herbs for a long, slow-cooked beef.
- Olive oil, butter, salt, and pepper – For searing and finishing.
- Deli rolls and provolone cheese – For the sandwiches. Any sturdy, crusty roll that can hold up to the au jus works.
How to Make Slow Cooker French Dip

Step 1: Season the chuck roast generously with salt and pepper, then sear on all sides.

Step 2: Transfer the seared roast to the slow cooker and add the sliced onion and minced garlic.
Step 3: Whisk together the beef broth, Worcestershire sauce, soy sauce, balsamic vinegar, thyme, and rosemary in a bowl. Pour over the beef and and toss in a bay leaf.

Step 4: Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours. The beef is done when it shreds easily with a fork.
Step 5: Remove the roast and shred with two forks, discarding any large pieces of fat. Return the shredded beef to the slow cooker, set to WARM, and let it sit for 10 minutes to soak up the juices.
Step 6: While the beef rests, butter the inside of each roll and place on a baking sheet. Broil in the oven for about 1 minute, until lightly golden. Watch closely so they don’t burn.
Step 7: Pile the beef and onions onto the rolls and top each with a slice of provolone. Broil 1 to 2 minutes, so the cheese melts.

Step 8: Strain the au jus and serve warm in small bowls alongside your crock pot French dip sandwiches for dipping.
Pro Tip:
The broiler moves fast. Watch the rolls and the cheese closely both times. If the broiler feels too aggressive, you can toast the buttered rolls on a griddle or in a hot pan instead.

Storage
Refrigerator: Keep the beef and au jus in airtight containers in the fridge for up to 4 days. Store the rolls separately so they don’t get soggy.
Freezer: Freeze the beef with some of the au jus for up to 3 months. Thaw in the fridge overnight before reheating.
To reheat: Warm the meat in the microwave or on the stovetop with a splash of the au jus. Toast fresh rolls and assemble right before serving.
Tips for the Best French Dip
- Don’t skip the sear. Browning the roast adds a caramelized crust and deeper flavor that the slow cooker alone can’t get.
- Choose the right cut. Chuck roast is the most forgiving for the slow cooker. Round roast (the traditional French dip cut) gets stringy after 7 to 8 hours.
- Cook on LOW when you can. High works in a pinch, but low and slow gives more tender shreds.
- Taste before serving. The au jus may need a pinch more salt or pepper depending on the broth you used.
- Toast the rolls. Untoasted rolls get soggy fast under the meat and cheese.
- Strain the au jus. Pulling out the bay leaf and any onion bits gives you a smoother dipping broth.

Serving Suggestions
A French dip doesn’t need a lot to round out the plate. French fries are the classic pairing, but a crisp green salad, slaw, or a plate of pickles works if you want to lighten things up.
Additions and Variations
- Swap the cheese. Mozzarella or Swiss melt nicely if you don’t have provolone.
- Add sautéed peppers and mushrooms. A handful piled onto the sandwich turns it into a French dip Philly hybrid.
- Use a different bread. Hoagie rolls, French bread, baguettes, or ciabatta buns all work as long as they’re sturdy enough to hold up to the au jus.

Slow Cooker French Dip
Equipment
Ingredients
- 2.5-3 pounds beef chuck roast
- 1 Tablespoon olive oil
- 1 white onion, thinly sliced
- 4 cloves garlic, minced
- 3 cups low-sodium beef broth
- 3 Tablespoons Worcestershire sauce
- 1 Tablespoon soy sauce
- 2 Tablespoons balsamic vinegar
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 4 deli rolls
- 4 slices provolone cheese
- 2 Tablespoons butter
- salt and pepper, to taste
Instructions
- Season the roast on all sides with salt and pepper, pressing it in gently. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 2–3 minutes per side, including the edges, until browned.
- Place the seared roast in the slow cooker. Add the sliced onion and minced garlic around it.
- In a medium mixing bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, balsamic vinegar, thyme, and rosemary. Pour over the beef and add the bay leaf.
- Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours. The beef is ready when it shreds easily.
