Like old-fashioned banana pudding but with the addition of strawberries! Layers of creamy pudding, ripe bananas, sliced strawberries, and vanilla wafers combine for the ultimate easy no-bake dessert.
Ingredients
1 ½cupsheavy whipping creamchilled
6.8ouncesinstant vanilla pudding mixdivided
2Tablespoonsconfectioners sugar
24ouncesevaporated milkchilled
1teaspoonpure vanilla extract
½cupsour cream
3cupsvanilla waferslightly crushed
3cupssliced bananas(about 4-5 ripe bananas)
5cupssliced strawberries
¼ - ½cupstrawberry toppingto taste
Instructions
In a large bowl, beat whipping cream, 1 tablespoon vanilla pudding mix, and confectioners sugar until stiff peaks form. Set aside.
In another large bowl, whisk together all remaining vanilla pudding mix, evaporated milk, and vanilla extract until dry pudding mix is completely mixed in. Let sit for 5 minutes or until thickened. Fold in sour cream.
In a trifle bowl (see instructions for 9x13 dish below), layer the ingredients: add half of the cookies and bananas, then cover with a third of the pudding. Add half of the strawberries and half of the strawberry topping. Cover with a third of the pudding, followed by the remaining cookies and bananas. Cover with remaining pudding. Add a layer of whipped cream (reserve some for garnish) and top with remaining strawberries and strawberry topping.
Garnish with the remaining whipped cream (can pipe on if desired) and/ or crushed cookie crumbs. Serve immediately.
Notes
Best enjoyed immediately but leftovers can be stored covered in the refrigerator for up to 2 days.If using a 9x13 baking dish I recommend reducing the layers to a layer of vanilla wafers on the bottom, topped with bananas, then pudding, followed by strawberries and strawberry syrup, with whipped cream on top. You can decorate the top of the dessert with additional nilla wafers if desired.
