This heirloom tomato salad with feta is a fresh, vibrant side made with juicy tomatoes, fresh herbs, and a quick balsamic vinaigrette. Perfect for summer meals, it’s ready in just 10 minutes.
Ingredients
1 ½poundsheirloom tomatoes, sliced, or Roma
1cupgrape or cherry tomatoes, halved
½Tablespoonolive oil
½Tablespoonbalsamic vinegar
6leavesbasil, chopped
2Tablespoonsparsley, chopped
¼cupcrumbled feta cheese
salt and pepper, to taste
Instructions
In a bowl, add tomatoes and drizzle with olive oil and balsamic vinegar. Gently toss to coat.
Season to personal taste with salt and pepper.
Top with chopped parsley, basil, and crumbled feta. Gently toss, then serve immediately.
