A fresh and flavorful chopped Greek salad with cucumbers, tomatoes, bell peppers, olives, and feta, tossed in a simple olive oil and vinegar dressing. Ready in minutes!
Ingredients
1English cucumber, chopped
8ouncescherry tomatoes, chopped
1red bell pepper, chopped
½cupred onion, chopped
½cupkalamata olives, chopped
½cupfeta cheese
6fresh mint leaves, julienned
¼cupextra virgin olive oil
2Tablespoonsred wine vinegar
1clovegarlic, mined or grated
1teaspoonoregano
⅛teaspoonsalt
⅛teaspoonpepper
Instructions
To a large bowl, add the chopped vegetables, olives, feta, and mint.
In a small bowl bowl, add the oil, red wine vinegar, garlic, oregano, salt, and pepper. Whisk to combine.
Pour the vinaigrette over the salad and toss to coat.
Cover and allow the salad to chill for at least 10 minutes, or until serving.
Notes
You can soak your chopped red onion in water for 10 minutes to help mellow their flavor.Sundried tomatoes and garbanzo beans make great additions to this chopped salad.Store covered with plastic wrap or in an airtight container in the refrigerator for up to 4 days.
