This cool and creamy spinach dip recipe is quick and easy to make with a packet of Knorr vegetable mix, frozen spinach, and a few other simple ingredients. Serve with pita chips, crackers, bread pieces, or fresh veggies for a perfect party dip for any occasion.
Ingredients
10ouncefrozen chopped spinachcooked, cooled, and squeezed dry
16ouncesour cream
1cupmayonnaise
1.4ouncepacket Knorr Vegetable recipe mix
8ouncewater chestnutsdrained and chopped (optional)
3green onionssliced thinly (optional)
Instructions
Add ingredients to a large bowl and stir well to combine.
Cover and chill overnight, or for at least 2 hours.
Give a good stir before serving. Serve with fresh vegetables, bread cubes, pita chips, or your favorite dippers.
Notes
To drain spinach: place cooked and cooled spinach in a clean kitchen towel or between several layers of paper towels, gather the towel/paper towels around the spinach, and twist it to squeeze out the excess water. Repeat until the spinach is well drained of excess water.Fresh spinach: Fresh spinach can be used instead of frozen. Cook it down, squeeze out the excess moisture, and chop it before adding to the dip. You will need 1 pound of fresh spinach to replace the 10 ounces of frozen spinach called for in the recipe.Yield: The recipe yields about 4 cups of dip.Storage: Store covered in the refrigerator for up to 4 days. I do not recommend freezing.Bread bowl: To make a bread bowl get a round loaf of bread such as sourdough, Italian, or pumpernickel. Slice off the top of the bread and cut out the inside, creating a bowl. Cube the bread pieces and serve with the dip.
