Brookie bar recipe made from brownie mix and pre-made chocolate chip cookie dough--a quick and easy dessert the whole family will love.
Ingredients
118 ounce box brownie mix
ingredients called for on brownie mix box
116.4 ounce roll of refrigerated cookie dough
Instructions
Preheat the oven to 350F. Line a 9 x 13 inch baking dish with parchment paper, allowing it to overhang on two sides for easy removal. Spray with non-stick cooking spray and set aside.
In a large bowl, prepare the boxed brownie mix according to package directions and spread into an even layer in the bottom of the prepared pan.
Take chunks of cookie dough and lightly place them into the top of the brownie batter. You can use as much or as little as you like. I typically use around ⅔ of the package.
Bake for about 35 minutes, or until the cookie pieces turn a nice golden brown and the brownies are nearly cooked through--but slightly moist.
Set the dish on a wire rack and allow it to completely cool before removing, slicing, and serving.
Enjoy as is or with a scoop of vanilla ice cream for a real treat!
Notes
I prefer using a metal pan for this recipe. A glass pan will work too, although it may take a bit longer to bake through.Store in an air-tight container at room temperature for up to 5 days. For longer storage, you can freeze your fully cooled brookies for up to 3 months.
