This farmer's casserole with hash browns & ham combines all of your favorite breakfast ingredients, such as eggs, hash browns, ham, and cheese, into one hearty and delicious overnight breakfast casserole.
Ingredients
6cupsfrozen hash browns
2cupsdicedcooked ham
1 ½cupsshredded Colby jack cheese
2green onionschopped
8large eggs
212 ounce cans evaporated milk
¼teaspoonsaltor to taste
¼teaspoonblack pepper
Instructions
Prep a 9x13-baking dish with non-stick spray; set aside.
Spread the frozen hash browns evenly along the bottom of the casserole dish. Top with ham, cheese, and green onions.
In a large mixing bowl, whisk to combine eggs, evaporated milk, salt, and pepper. Pour into the baking dish. Top with green onions, if desired.
Cover and place in the refrigerator overnight, or until ready to bake.
When ready to bake, preheat the oven to 350° F. Uncover the casserole and bake for 1 hour or until the center is set and firm.
Remove from the oven and allow to sit for 5 minutes before slicing and serving.
