This chicken and dumpling casserole is a delicious take on a classic southern comfort food recipe that the whole family will love.
Ingredients
For the Casserole:
2cupscooked chickenshredded or diced
6Tablespoonsbutter
1cupchopped onion
3Tablespoonsall-purpose flour
1 - 10ozbag frozen mixed veggies
2cupschicken broth
1can cream of chicken soup
1cupshredded parmesan cheeseor cheddar, if desired
1tspsalt
1tsppepper
1tsppoultry seasoning
For the Dumplings:
1cupall-purpose flour
2tspbaking powder
¼tspsalt
1large eggslightly beaten
⅓cupbuttermilk
½tsppoultry seasoning
½cupcheddar cheeseoptional
Instructions
Preheat oven to 350 degrees. Prepare a 9 x 13 in casserole dish with cooking spray.
Spread chicken evenly on the bottom of the casserole dish.
Heat the butter in a large skillet on medium-high heat, add the chopped onion. Saute onion for about 3 minutes, until transparent.
Sprinkle the flour over the onion and butter, stir well, and allow to thicken.
Add the frozen vegetables, broth, soup, cheese, and seasonings. Heat for about 5 minutes, stirring often until thickened.
Pour the mixture over the chicken.
In a medium bowl, mix the dumpling ingredients together just until moistened.
Using a fork, drop dumplings on top of the casserole. Drop by large amounts or small amounts, depending on how large you would like your dumplings to be.
Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes.
If top of dumplings aren't a nice golden brown, you can broil the casserole (uncovered) for a couple of minutes.
