Season the chicken, then add to a large skillet with oil & butter.

Cook for 5-7 minutes or until the chicken is seared a golden brown and cooked through.

Add the remaining ingredients to the skillet and cook for 2-3 mins, or until the sauce slightly thickens.

Remove the skillet from heat and garnish chicken with fresh parsley. Serve over rice immediately.
