This Easter cake roll is a sweet and fruity Easter dessert filled with a surprise sprinkling of mini egg chocolate candies!


Prepare the cake by combining the cake mix, eggs, water, oil, powdered sugar, strawberry flavoring and pink food coloring.

STEP 1: 

Pour the batter into the prepared pan. Bake for  10-12 minutes or until a toothpick comes out clean.

STEP 2: 

Gently roll the cake with parchment paper as soon as it comes out of the oven. Let cool for 1-2 hours. 

STEP 3: 

Prepare the cream filling.

STEP 4: 

Unroll the cooled cake, spread with cream filling, and fill with mini eggs.  Roll the cake up. 

STEP 5: 

Decorate the strawberry cake roll with green coconut, piped cool whip, and candy eggs.

STEP 6: 

Slice, serve, and enjoy!
