No-Bake peanut butter cornflake cookies are fun and easy to make with just 5 ingredients!
Ingredients
1cupgranulated sugar
1cuplight corn syrup
1cupcreamy peanut butter
2teaspoonsvanilla extract
6cupscornflakes
Instructions
Line two baking sheets with parchment paper and set aside.
In a large saucepan over medium-low heat, combine the peanut butter, sugar, and corn syrup. Stir often until the mixture comes to a boil then remove from heat. Immediately stir in vanilla. Gently stir in cornflakes until evenly coated.
Immediately drop cookies onto the prepared baking sheets using a greased cookie scoop or spoon.
Allow cookies to set at room temperature for 30 minutes before serving or storing.
Notes
Store in an airtight container at room temperate for up to 1 week or freeze for up to 3 months.Try adding 1/4 cup butterscotch chips to the mix or drizzling the top of cookies with melted chocolate for a bit of added flavor.
