This Lipton Onion Soup Mix Meatloaf is quick and easy to make and sure to become your family's favorite meatloaf recipe. Thanks to an envelope of Lipton onion soup mix, the meatloaf has tons of flavor without having to add a ton of ingredients!
Ingredients
1packet Lipton Onion Soup mix
1 ¼cupItalian-style panko bread crumbs
¾cuphalf-and-half
½cuponionroughly chopped
⅓cupketchup
2large eggs
1TablespoonWorcestershire sauce
2poundsground beefI used 80/20
fresh parsleyfinely chopped, optional garnish
Meatloaf Glaze:
½cupketchup
3Tablespoonslight brown sugar
Instructions
Preheat oven to 350°F. In a food processor, blend the soup mix, panko crumbs, half-and-half, onion, ketchup, eggs, and Worcestershire sauce for 1 minute, or until the onion is finely minced.
In a large bowl, gently mix together the half-and-half mixture with the ground beef.
Line a baking sheet with foil or parchment paper. Place the ground beef mixture onto the baking sheet and form it into a loaf.
In a small bowl, stir to combine the ketchup and brown sugar for the glaze. Spread the glaze over the entire meatloaf.
Bake for 55-60 minutes, or until the center of the meatloaf reaches 165°F. Let the meatloaf cool for about 10 minutes before cutting into slices. If desired, garnish with fresh parsley before serving.
Notes
To make without a food processor: Chop the onion as finely as possible and use your hands to mix the ingredients before proceeding to step 2.Internal temperature: Sometimes even when meatloaf looks done on the outside, the inside is still pink. You can check if your meatloaf is cooked through with a meat thermometer. Once it reaches 160°F it's ready. Storage: Refrigerate leftovers for up to 4 days or freezer for up to 3 months.
