In a large bowl, add the pancake mix, egg, and buttermilk. Stir well.
Add the chopped candy corn and cereal. Stir well to incorporate.
Add 1 ½ inches of oil to a frying pan or Dutch oven and heat over medium heat for 5 minutes (or use a candy thermometer to reach 350℉).
Drop the candy corn dough by Tablespoons into the hot oil. Fry on both sides for 1 minute each.
Carefully remove fried candy corn fritters from hot oil using a spider strainer. Place on a paper towel for 1-2 minutes to soak up any excess oil, then dust with confectioners sugar. Transfer to a wire rack to completely cool. (Do not wait any longer than 2 minutes to transfer or the fried candy corn dough will begin to stick to the paper towel).
Notes
If you can't find Funfetti pancake mix use regular pancake mix. Add a couple of spoonfuls of sprinkles, if desired.
