This easy Cracker Barrel pot roast copycat is made in the slow cooker with tender beef, carrots, and celery in a savory onion gravy. It's the perfect dump and go crockpot dinner for any night of the week.
Ingredients
2½ - 3lbsstew beefor chuck roast
6carrotspeeled and chopped
4celery stalkschopped
1 (14.5 oz)canlow-sodium beef broth
2 (0.87 oz)packetslow-sodium brown gravy mixdivided
1 (1 oz)packetonion soup mix
Instructions
Add the beef, carrots, celery, beef broth, one brown gravy packet, and the onion soup mix to your slow cooker. Stir to combine.
Cover and cook on low for 6-8 hours or high for 4-5 hours, until the beef is tender and cooked through.
Stir in the second brown gravy packet. Cover and allow to cook for 10-15 minutes, or until sauce is thickened.
Serve hot over mashed potatoes, noodles, or rice.
