Rich and chocolatey Coca-Cola Fudge with Walnuts is made using real Coca-Cola, giving it a great kick of Coca-Cola taste.
Ingredients
6Tablespoonsbutter
1 ½cupsgranulated sugar
⅓cupevaporated milk
½cupCoca-Colaor ½ Coca-Cola Mini Can
1cupsemi-sweet chocolate chips
½7 ounce jar marshmallow cream
½cupand 2 Tablespoons chopped walnutsdivided
Instructions
Prepare an 8 x 8 inch pan with parchment paper and a thin layer of non-stick spray. Set aside.
Melt butter over medium heat in a large saucepan.
Once the butter has melted, add sugar, evaporated milk, and Coca-Cola. Bring mixture to a full boil, stirring constantly.
When it has reached a full boil, cook for 5 minutes while it boils, stirring constantly*. The mixture should thicken slightly. If it does not, stir and boil for another 1-2 minutes.
Remove pot from heat and add chocolate chips and marshmallow cream. Mix well until the texture is smooth.
Stir in ½ cup walnuts.
Pour fudge mixture into pan and sprinkle with remaining walnuts.
Refrigerate fudge for 2 hours, or until firm.
Slice into bite-sized pieces and enjoy.
Notes
*A candy thermometer is the absolute best way to know when your fudge is ready. If you have one, use it to make sure the fudge reaches between 234 and 240°F before removing it from the burner. If you don't have a candy thermometer, use the 5-minute boil method above.Store your coke fudge in an airtight container in the fridge. Enjoy chilled or at room temperature.If you want to make twice as much fudge and use the entire jar of marshmallow cream and an entire Coca-Cola mini can (or 1 cup of soda), you can use two 8-inch pans and cook the two batches separately to ensure that your fudge sets.
