These Buckeye Brownies start with a fudgy boxed brownie base, topped with creamy peanut butter and rich chocolate ganache. They're an easy, crowd-pleasing dessert perfect for parties or the holidays.

Preheat the oven to 350°F, or as called for on your box of brownie mix. Line an 8x8-inch or 9x9-inch pan with parchment paper and set aside.
Prepare the brownie mix according to the package instructions (likely with eggs, water, and oil). Bake according to package instructions. Allow to cool completely.

In a large bowl, beat to combine peanut butter, confectioners sugar, melted butter, and vanilla until smooth. Spread the peanut butter mixture evenly over the cooled brownies.

Place chocolate in a heat-safe bowl and set aside. In a saucepan, heat the heavy cream until it just starts to simmer (do not let it come to a boil). Pour the hot cream over chocolate and let sit for 2-3 minutes. Stir until smooth. Immediately pour over the brownies, using a spatula to spread into an even layer if necessary.

We used Betty Crocker Fudge brownie mix (16.3 ounces). You can use your favorite brownie mix.For the best texture, use a smooth and creamy peanut butter like Jif or Skippy. Avoid natural peanut butter and chunky peanut butter.Store in the refrigerator for up to 5 days or freeze for up to 2 months.
