Transfer the mixture to the slow cooker. Add bacon, tomatoes, cream cheese, cheddar, and half the Colby jack cheese. Stir to combine.
Cover and cook on low for 2-3 hours, stirring every 20-30 minutes, until melted and combined.
Sprinkle remaining Colby jack cheese on top, cover, and let melt for a few minutes.
Serve in a bowl or set your crockpot to "warm" and serve from the crockpot. Garnish with additional chopped bacon and/or green onions, if desired. Serve with tortilla chips or your favorite dippers.
Notes
On the stovetop: After step 2, reduce heat to low and add the remaining ingredients to the skillet. Cook, stirring frequently, until the cheese melts and everything has heated through. Remove from heat and allow to cool for a few minutes before serving.Keep warm: The dip can be kept in the slow cooker on the "warm" setting for 2-3 hours, stirring occasionally to avoid sticking and burning on the bottom.Storage: Once cooled, the dip can be stored in an airtight container in the refrigerator for 3 days and heated in the microwave or on the stovetop over low heat until warmed. For longer storage, freeze for up to 3 months. Thaw in the refrigerator overnight before reheating. Add a little milk to the dip to help with smoothness and consistency.
