Ingredients
4cupsall-purpose flour
1Tablespoonsgranulated sugar
1tspbaking soda
1tspbaking salt
4Tablespoonsbutterchilled and cubed
1cupraisins
1large egg
1 3/4cupsbuttermilk
Instructions
Preheat oven to 400℉. Prepare baking sheet by greasing with butter / non-stick spray or lining with parchment paper.
In a large bowl, combine flour, sugar, salt and baking soda.
Add butter, working it into the flour mixture with your fingers until it resembles a coarse meal.
Add raisins, continuing to use your fingers to combine.
In a small bowl, whisk together egg and buttermilk.
Create a hole in the middle of dough and pour the egg mixture into it. Knead the egg mixture into the dough.
Form dough into a slightly flattened ball and transfer to baking pan. If dough is too sticky and wet to work with add a bit more flour.
Using a small knife, cut an X into the top of the loaf.
Bake 35-45 minutes until lightly golden.
Notes
Can be made in a cast iron skillet as well, but allow for a few extra minutes in the oven.
