Cake mix cookies are easy to make with 3 simple ingredients: a box of cake mix, oil, and eggs. They can also be customized endlessly by switching up the cake mix flavor and adding mix-ins!
Ingredients
15.25ouncecake mix
⅓cupvegetable oil
2eggsroom temperature
1cupmix-insoptional
Instructions
In a large bowl, mix well to combine the cake mix, oil, eggs, and mix-ins.
Optional, but recomennded: Chill the dough in the refrigerator for at least 30 minutes.
Preheat your oven to 350°F and line cookie sheets with parchment paper.
Use a cookie scoop or your hands to shape dough into 1-inch balls and place 2 inches apart on the prepared baking sheet.
Bake at 350° for 10-12 minutes. You don’t want the cookies to get golden. If you see them starting to get color on the edges, remove them from the oven.
Allow the cookies to cool right on the sheet pan for 5-10 minutes, then transfer to a cooling rack.
Notes
Store covered in an airtight container at room temperature for up to 4 days. They also freeze well.If you are in a rush you can skip chilling the dough. But I do recommend chilling for best results. Without chilling the dough will be sticky / difficult to handle and will likely spread more while baking. Your cookies will still taste great though! *Nutrition information was calculated without any optional add-ins such as chocolate chips.
