Slow Cooker Marry Me Chicken is delicious and impressive dinner that's impressive enough for guests but easy enough to be a weeknight meal. Tender chicken cooks in a rich and creamy sauce with garlic and sundried tomatoes. Serve over pasta for an unforgettable meal.
Ingredients
2poundsboneless skinless chicken breasts
1-2Tablespoonsolive oil
1 ½cupschicken stock
3Tablespoonscornstarch
1cupheavy cream
3clovesgarlicminced
1teaspoonItalian seasoning
1teaspoononion powder
1teaspoonblack pepperor to taste
½teaspoonpaprika
½teaspoonsaltor to taste
½cupsundried tomatoesdrained
4Tablespoonsbuttercut into 4 pats
fresh basiloptional garnish
Instructions
In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add chicken breasts and brown for about 2 minutes per side. Add more oil if needed. (The goal is to get some color on the chicken — not to cook it through.)
Place the browned chicken breasts in the bottom of the crockpot.
Add the chicken stock and cornstarch to a mixing bowl. Whisk until no lumps remain.
Stir in the heavy cream, garlic, Italian seasoning, onion powder, black pepper, paprika, and salt.
Pour the sauce mix over the chicken breasts.
Top with the sundried tomatoes and butter.
Cover and cook on low for 6-7 hours or high for 3-4 hours.
Serve warm, garnished with fresh basil, if desired.
Notes
Use chicken thighs instead of chicken breasts if you prefer.
This dish is fabulous served over pasta, rice, or mashed potatoes.
Try adding some freshly grated parmesan cheese on top right before serving for extra flavor.
