A classic frozen piña colada recipe made with coconut cream and coconut milk and packed with tropical coconut and pineapple flavor.
Ingredients
⅓cupcoconut cream
1 ½cupscoconut milk
½cuppineapple juice
¼cupgranulated sugaror to taste
2cupsice
3ouncesrum⅜ cup
Pineapple Whipped Cream Topping (optional):
¼cuppineapple juice
⅔cupheavy whipping cream
Instructions
For the optional whipped topping: In a medium-size bowl beat the pineapple juice and heavy cream with an electric mixer for 4-5 minutes until soft peaks form. Set aside.
For the cocktail: In a blender, add coconut cream, coconut milk, pineapple juice, rum, sugar, and ice and blitz until no large pieces of ice remain.
Pour into cocktail glasses and top with a dollop of the pineapple whipped cream topping, if using. Garnish with a pineapple wedge and maraschino cherry and enjoy.
Notes
Use white rum for a traditional Pina Colada, or a gold rum or spiced rum for deeper rum flavor.
