Ingredients
½cupbuttersoftened
½cuppacked brown sugar
½cupgranulated sugar
1large egg
1teaspoonvanilla extract
½teaspoonbaking soda
1teaspoonhot water
1teaspoonsalt
1 ½cupsall-purpose flour
1 ¼cupschocolate chips
Instructions
Preheat the oven to 350 degrees. Line baking sheets with parchment paper or a silicone liner and set aside.
In a large bowl, mix together the butter, brown sugar, white sugar until smooth. Add in the egg and vanilla and mix until just combined.
In a small bowl, add 1 tsp hot water and then stir in the baking soda until dissolved. Add this to the batter and then stir in the salt and flour until just combined.
Fold in the chocolate chips.
Drop large spoonfuls of batter (around 2 tablespoons in size) onto an ungreased baking sheet.
Bake for 10 minutes, or until the edges are barely golden brown. Let cool for 2-3 on the baking sheet then transfer to a wire cooling rack to cool completely.
Notes
If you like some extra crunch in your cookies, add ½ cup of walnuts or pecans.
Add ½ cup of oatmeal for a chewier twist to these cookies.
If you prefer your cookies with chocolate chunks (instead of chocolate chips) swap them out for the same amount.
Take the cookies out of the oven when they are just barely golden brown around the edges. Leaving them in for longer will cause the bottom of the cookies to become too crunchy.
When adding your hot water and baking soda together, make sure that your water is hot to the touch and that the baking soda completely dissolves. Try stirring it with a whisk or fork to help it dissolve.
Feel free to skip the mixer. You can easily make this recipe by stirring it with a spoon so that you don’t have to get out your mixer.
