Soft and tender lemon cupcakes with cream cheese frosting, these are super delicious!


Step 1

Beat the butter & sugar together for 2 mins, or until creamed.

Add eggs one at a time, mixing until fully incorporated.

Mix in half of the dry ingredients, half of the milk, and the vanilla extract, lemon zest & lemon juice.

Add the remaining dry ingredients & milk. Mix until fully combined & no lumps are visible.

Step 4

Spoon the batter into the cupcake liners until about 2/3 full.

Bake for 18-22 minutes. Cool completely before frosting!

Make the frosting as directed. Pipe cream cheese frosting onto cupcakes!
