Ingredients for Chicken and Dumpling Casserole

– Cooked chicken  – All-purpose flour – Frozen mixed veggies – Chicken broth – Chicken soup – Parmesan cheese – Buttermilk

Step 1

Prep your casserole dish with cooking spray. Then, spread chicken evenly in the bottom of the dish.

Heat butter in a skillet and saute the chopped onion for 3 minutes. Sprinkle the flour, stir well, and allow to thicken.

Add frozen veggies, broth, soup, cheese, and seasonings. Cook, stirring frequently, for 5 minutes

Pour the mixture into the casserole dish on top of the shredded chicken.

In a medium bowl, mix the dumpling ingredients together just until moistened.

Using a fork, drop dumplings on top of the casserole. Cover with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes. Allow casserole to sit for a few minutes before serving.
