easy spring dessert

Ingredients for the Carrot Cake Cookies 

– Carrot cake mix – All-purpose flour – Granulated sugar – Ground cinnamon – Shredded carrots – Cream cheese  – Vanilla extract

Step 1

In a large bowl, whisk together the carrot cake mix, flour, and sugar.

Add the butter and eggs and beat until combined. Add the carrots, oats, cinnamon, and nutmeg.

Continue mixing until well-combined. Use a cookie scoop to portion out your dough and place on a lined baking sheet.

Pop them into the fridge to chill for 1 hour. Roll the cookies into balls, place them 2-inches apart on a lined baking sheet.

Bake for 12 minutes. Allow cookies to cool on the for 8 minutes before transferring to a wire rack to cool.

Beat together the cream cheese, butter, sugar, vanilla extract, and cinnamon. Mix until smooth.

Transfer your frosting to a piping bag and top each cooled cookie with a generous drizzle.
