Main Ingredients Used

Chocolate | You can use milk chocolate chips or broken up chocolate bars for this. The chocolate you stir in mixed with the cocoa powder is going to elevate the flavor of these brownies to a whole new level.

Marshmallows | I used large marshmallows that I cut in half. I love the larger pieces of marshmallows in these brownies. Now, you can use mini marshmallows if you would like.

Graham Crackers | Take your graham crackers and break them into pieces. Leave larger pieces so when you bite into these brownies you can taste the buttery graham crackers.

How to Make Fudgy S’mores Brownies

Combine | Start by working on your homemade brownie batter. If you don’t want to make a homemade brownie you can reach for a box. But trust me the homemade brownie is worth the bit of extra effort.
Mix | Mix in the marshmallows and graham crackers. Then transfer into your prepared baking dish. You want to toss just enough so items are incorporated. Don’t overmix.
Bake | Bake your brownies until edges are crispy. Cool completely before slicing.

Variations To Recipe

  • Use boxed brownies instead of making homemade.
  • Add in some chopped nuts like pecans for added crunch.
  • Sprinkle some marshmallows on top right before the brownies are done baking and then let them get golden brown for more of a s’mores look.
  • Double the recipe if you want to serve a crowd. Use two 8″ pans or one 9″ x 13″ pan. If using one larger pan baking time will have to be increased.
  • Pair with a big scoop of vanilla ice cream for a truly decadent dessert!

What makes brownies fudgy vs cakey?

The biggest difference is for a fudgy brownie you have a higher fat to flour ratio used. Now for cakey brownies, they use more flour and baking powder.

This recipe makes fudgy s’mores brownies. I thought the fudginess worked well with the marshmallows and graham crackers.

Absolutely! Use a gluten-free brownie recipe or mix, and then reach for gluten-free graham crackers or cookies to replace the classic graham cracker. Just make sure you use a recipe for your brownies that you know works.

S'mores Brownies

Ingredients
 

  • 1/2 cup butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup chocolate chips or a broken chocolate bar
  • 10-15 marshmallows cut in half
  • 8 graham crackers broken into pieces

Instructions

  • Preheat oven to 350 F. Grease an 8-inch square pan with cooking spray and set aside.
  • In a large bowl, beat the butter and sugar together until combined. Add the eggs and vanilla; beat until combined.
  • In a medium-sized bowl, stir to combine the flour, cocoa powder, salt, and baking powder.
  • Beat the dry ingredients into the wet ingredients until just combined.
  • Fold in the marshmallows, chocolate chips, and graham crackers.
  • Spread batter in pan and bake for 25 - 28 minutes, until the edges of the brownies are crisp and an inserted toothpick comes out with just a few crumbs and no wet batter.
  • Allow brownies to cool completely then cut and serve.

Notes

Looking for a shortcut? You can use a box of brownies mix instead of making the batter from scratch.
The recipe can be doubled for a crowd and baked 2 pans or one 9" x 13" pan. If using a larger pan baking time will be longer.

    1. Can you use mini marshmallows? If so what do you think the measurement for them would be? I happen to have an open bag I don’t want to go to waste.
