No Bake Brownie Mix Truffles are rich and fudgy, and easy to make with 4 simple ingredients: brownie mix, chocolate syrup, corn syrup, and sprinkles!

Like our boozy dark chocolate peppermint truffles and old-fashioned rum balls, these rich chocolate truffles make for an easy no-bake Christmas treat or a sweet brownie-batter treat any time of the year.

These no-bake brownie truffles taste just like brownie batter–but don’t worry, they are totally safe to eat. No raw eggs or raw flour here.

Just like when making brownie batter dip, we will heat-treat our brownie mix before making the no-bake truffles so that the flour in the brownie mix can be enjoyed worry-free.

Make a batch of no-bake brownie mix truffles for the holidays, birthdays, or just because. There really is no bad time for chocolate brownie truffles!

Ingredients

  • brownie mix – I always use a fudge brownie mix. I have tried the recipe with generic and brand name brownie mixes and it always comes out well. Do be sure that you get an 18- or 19-ounce package that is made for a 13 x 9 inch baking pan, not one of the smaller packages (10-ish ounces) that are made for an 8 x 8 pan.
  • chocolate syrup – Any brand works, just be sure to use chocoalte syrup, not hot fudge which would be too thick
  • light corn syrup
  • water 
  • sprinkles – have fun with festive sprinkle color combinations or try some of the other coating options below.

Recipe Variations

  • Switch up the sprinkles for other holidays and occasions. Black and orange for Halloween, red and pink for Valentine’s Day, etc… You could even use sprinkle combinations to support your favorite sports team.
  • Try coating your brownie mix truffles in melted chocolate for even more chocolatey goodness.
  • Skip the sprinkles and roll your tuffles in chopped nuts or shredded coconut.

How to Make No-Bake Brownie Mix Truffles

Step 1: Since eating raw flour is a no-no we will start by heat treating the brownie batter. To do this, simply add the dry brownie mix to a large microwave-safe bowl and microwave in 30-second increments, stirring between each, until the temperature of the mix reaches 165°F on an instant read thermometer. It shouldn’t take longer than 2 minutes total. Once it reached 165°F, allow the mix to cool down on the countertop for about 5 minutes, or until cool enough to handle.

Step 2: Add corn syrup, chocolate syrup, and water; stir until well combined.

Step 3: Place sprinkles in a shallow dish. Line a baking sheet with parchment paper and keep it nearby for your truffles to go on after being rolled. Dampen your hands slightly. Scoop out 1 tablespoon of brownie mixture at a time (this scoop helps) and use your hands to roll it into a ball. Then, roll in sprinkles until well-covered and place onto the baking sheet.

Tip: Keep a bowl of water or wet kitchen towel nearby to re-dampen your hands as needed if the batter keeps sticking to them.

Step 4: Once all the batter has been made into truffles place them in the refrigerator to chill for at least one hour before serving. Serve chilled or at room temperature.

Storage

Store in an airtight container in the refrigerator, with a sheet of parchment or wax paper between layers to prevent sticking.

No Bake Brownie Truffles are a rich and fudgy bite-sized treat that tastes just like brownie batter!

Ingredients
 

  • 1 19 ounce package brownie mix (13×9 in pan size)
  • 2 Tablespoon chocolate syrup
  • 2 Tablespoon corn syrup
  • ¼ cup water
  • sprinkles

Instructions

  • Place the dry brownie mix in a large microwave-safe bowl and microwave in 30-second increments, stirring between each, until the temperature of the mix reaches 165°F on an instant read thermometer (this should take about 90-120 seconds).*
  • Allow the mix to cool down on the countertop for about 5 minutes. Then, add in the corn syrup, chocolate syrup, and water. Stir until well combined and no lumps remain.
  • Place sprinkles in a shallow dish. Line a baking sheet with parchment paper and keep it nearby for your truffles to go on after being rolled. Dampen your hands slightly. Scoop out 1 tablespoon of brownie mixture at a time (this scoop helps) and use your hands to roll it into a ball. Then, roll in sprinkles until well-covered and place onto the baking sheet. 
  • Once all the batter has been made into truffles place them in the refrigerator to chill for at least one hour before serving. Serve chilled or at room temperature.

Notes

* Although it is rare, the uncooked flour in brownie mix can be contaminated with bacteria and cause food-borne illness. That is why it is best to play it safe and heat the brownie mix up before using it in no-bake recipes such as these truffles.
When rolling the balls, keep a bowl of water or wet kitchen towel nearby to re-dampen your hands as needed if the batter keeps sticking to them.
Store no-bake truffles in an airtight container in the refrigerator, with a sheet of parchment or wax paper between layers to prevent sticking.
