Crockpot Loaded Baked Potato Soup

This thick and hearty crockpot baked potato soup is loaded with creamy potatoes, onions, shredded cheese, crispy bacon, and scallions.

Fall is approaching so slow cooker recipes like this and my chili crockpot recipe are going to be on constant rotation in our house.

Crockpot soups are one of my favorites, as slow cooking really helps lock in all the flavors into each bite.

Ingredients

Ingredients on countertop: shredded cheese, sour cream, bacon, chopped potatoes, heavy cream, chicken broth, chopped onion, green onions, salt, pepper, butter, and flour
  • Potatoes – I use Russet, but even Yukon Gold work in this recipe. Just peel and dice up into smaller pieces.
  • Chicken Broth
  • Onion – White or yellow will work.
  • Salt and Pepper – Season to taste.
  • Butter
  • Flour – This is going to be the thickening agent for the soup.
  • Heavy Cream – Adds a lot of rich and creamy texture to the soup.
  • Shredded Cheese – we used colby jack but cheddar also works well
  • Bacon – Crumbles of cispy cooked bacon add a nice salty component to the soup.
  • Scallions – optional topping

How to Make Loaded Baked Potato Soup in Crockpot

Start by peeling and dicing up the potatoes, and place them in the crockpot. (We used a 7-quart crockpot.)

Next, add the broth, onion, and salt and pepper. Cover and cook as directed in the recipe card.

When the soup has about an hour left to cook, you will want to grab a potato masher and break up the potatoes.

Then move over to the stovetop. Add your butter to a saucepan and let it melt. Then stir in the flour and cook while stirring non-stop. You want to let it cook a minute or two.

Slowly whisk in the heavy cream, stir constantly. Let it cook and simmer, thickening up.

Once the mixture is thickened, pour it into your slow cooker and give it a good stir.

Allow the soup to finish cooking, then ladle up and serve topped with bacon, scallions, shredded cheese, and/or sour cream.

Storage

Store leftover crockpot loaded baked potato soup for up to 3 days in the fridge.

Warm-up in the microwave, in a pot on the stove, or in your crockpot.

Unfortunately, I don’t recommend freezing any leftover soup, as when you thaw out the loaded potato soup it will be kind of curdled and the texture will be different.

Can I use frozen hashbrowns?

Want a shortcut for making this crockpot potato soup? Reach for frozen diced hashbrowns, and use that in replace of fresh diced. It will change the texture a bit, but overall it will still be delicious.

Can I make this soup a day in advance?

This is one soup that doesn’t taste as good reheated. The texture of the potato will change quite a bit once it is cooled off from being cooked. You will want to make this soup the day you plan to eat it.

Can I make this a vegetarian potato soup?

You can make this a vegetarian potato soup by leaving out the bacon and swapping chicken stock with vegetable stock.

Crockpot Loaded Potato Soup

Thick and hearty crockpot loaded baked potato soup is loaded with creamy potatoes, shredded cheese, crispy bacon, onions, and scallions.

Ingredients
 

  • 4 cups russet potatoes peeled and chopped
  • 4 cups chicken broth
  • ½ cup onion finely chopped
  • ½ Tablespoon salt
  • ½ Tablespoon pepper
  • 4 Tablespoon butter
  • ¼ cup all-purpose flour
  • 1 ½ cups heavy cream

Toppings:

  • 8 slices bacon cooked and crumbled, or to taste
  • 1 cup shredded cheese or to taste
  • cup chopped scallions or to taste
  • 1 cup sour cream or to taste (optional)

Instructions

  • Add potatoes, chicken broth, onion, salt, and pepper to your crockpot. Cover and cook on low for 6 hours or high for 4 hours.
  • About an hour before cooking is finished, use a potato masher to mash up the potatoes until coarsely chopped inside the crockpot.
  • In a saucepan, melt butter over medium heat. Sprinkle flour into the pan and whisk into the melted butter. Cook for 1-2 minutes. Slowly whisk in heavy cream. Cook over medium-low heat until the mixture begins to thicken. Pour the mixture into your slow cooker, and stir to combine.
  • Allow soup to finish cooking according to your original cook time for the crockpot.
  • Serve topped with bacon, cheese, scallions, and sour cream (if desired).

Notes

Store leftovers for up to 3 days in the fridge. Reheat in the microwave, in a pot on the stove, or in your crockpot.

  1. What size crock pot? I have a 3 qt so I know the measurement would be different. So can you email me the correct measurements for a 3qt pot?

  3. This was really salty. Are you sure there should be 1/2 Tablespoon of salt. It was really good though.

  4. Hint….if the soup is not thickening as you like….sprinkle a little bit of instant mashed potato flakes in, a little at a time. Works great in cream of broccoli soup also.
